Much of our modern diet has been stripped of it's vitamins & nutrients.
Vegetables are being developed with higher sugar content. They are bred to be tougher, to resist bruising in transit, & picked green.
They are ripened artificially, which also reduces vitamins & nutrients.
They are shipped great distances to market at high oil consumption.
Most of what is sold as processed food is high in carbohydrates & fat.
